Our story

Co-founders Nikki Barr and Trevor Schultz first dreamt up Langhorne Meats and Provisions as they worked side by side in an artisanal butcher shop in Milwaukee, Wisconsin. They discovered they shared a passion for quality food and local, sustainable agriculture. While they loved connecting city dwellers to the best farmers in the upper Midwest, they wanted to provide artisanal, farm-to-table food in rural communities where the suppliers lived and worked the land. A Missouri native, Nikki convinced her colleague and friend to open a similar farm-to-table butcher in America’s Hometown, Hannibal.

 With their combined expertise, Nikki and Trevor are creating a unique farm-to-table butcher experience that offers the finest locally sourced beef, lamb, pork, and poultry, and celebrates the integrity and heritage of local agriculture and rural America. 

Trevor is a seasoned meat cutter specializing in whole animal butchery and crafting artisanal sausage. Trevor knows that good, wholesome food is a collaborative process that begins by taking care of the land and ends by taking care of people. Raised in rural Wisconsin, he finds joy in understanding the mechanics and growth of things. When not in the cutting room, you might find him foraging for ramps or mushrooms, or disassembling and reassembling objects to satisfy his curiosity.

 Nikki studied animal science at the University of Missouri and is a sustainable agriculture specialist. She was eight years old when she raised her first livestock for 4-H in mid-Missouri. Nikki’s passion is helping customers and communities understand the important role of local, sustainable agriculture in creating vibrant, healthy, rural communities. She has first-hand experience raising multiple herds of heritage Kune Kune hogs, and she knows the food-service industry inside and out. She loves classic country music and witty jokes.

A Taste of Tradition, a Glimpse of the future

While you can currently shop our retail store at 120 North 3rd Street, exciting changes are on the horizon! We're embarking on a building renovation that will transform a historic downtown building into a full-service butcher shop, complete with a broader selection of cuts, house-made specialties, tasty treats, heat-and-eat meals, hands-on butchery, cooking classes and more!
